Getting there is a bit of a mission (because it's practically in Malaysia), but it was hands down my favorite place, not only in Thailand, but in all of Southeast Asia. Well worth the journey - 100%.

MUST EAT - KHAO SOI!

This is a famous dish in Northern Thailand, and for good reason. It. Is. Good. We ate it just about every night we were in Chiang Mai, and I still dream about it. I wish I were joking. I would describe it in detail, but my mouth is already watering... you'll just have to try it for yourself.

BEST TIME TO VISIT - EARLY TO MID APRIL

Yes, it's hot... but it's also Songkran - aka Thailand's New Year! The Thais celebrate with a massive water fight that you will not want to miss. Head to Chiang Mai for the biggest celebration.
